Ms. Lucy’s Classic Cajun Culture & Cooking:Ms. Lucy's Pork Roast

Pork Roast


  • 1 pork roast (4 pounds)
  • 1/4 cup finely chopped onion
  • 4 cloves of garlic, finely chopped
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/4 cup of oil
  • 2 cups of water
  • salt and pepper to taste


Combine chopped onion and garlic in a small dish. Season with salt and pepper. Cut slit in middle of roast and stuff all the onion mixture inside. Season outside of roast with salt and pepper. Heat the oil in a heavy roasting pot. Place the roast in the pot. Brown all sides, adding small amounts of water occasionally. After roast is browned on all sides, add the rest of the water and cover. Cook on low heat about three hours. This also makes a wonderful gravy. Serve over rice. Serves 6-8.
