Ms. Lucy’s Classic Cajun Culture & Cooking:Ms. Lucy's Coconut Pie

Coconut Pie


  • 2/3 cup flour
  • 3/4 cup sugar
  • 2 cups milk
  • 4 medium separated eggs
  • 1 1/2 teaspoons Watkins vanilla flavoring
  • 1 1/2 cups Baker's coconut flakes


Mix flour and sugar in a deep sauce pan. Add milk and heat until it comes to a slow boil, stirring constantly. When it starts to thicken, add the beaten egg yolks to 1/4 cup hot mixture. Mix well and return to mixture in saucepan. cook on medium heat stirring constantly until it thickens. This takes about 5 minutes. Remove from heat and add vanilla flavoring. Stir well, add coconut and mix well. Pour into baked pie shell. Top with egg white meringue and bake at 400 degrees for 10 minutes. Serves 6.
